Also if you can link a subscription to a customer w/o a payment source, there's a line in Billing Quickstart that could use some work: "You can create a customer with or without a stored payment method .... only customers with a stored payment method can be subscribed to it." 
Yep, there is a many-to-many relationship between subscriptions and plans. To clarify, that's referring to the example plan given on that page. You can either add a trial to the subscription or you can email an invoice to your customer if they don't have a stored payment method.
Thanks for responding! Tell me if I'm flat wrong here, but it sounds like a many-to-many? Subscriptions can have many plans, but one plan can also be tied to many subscriptions (from different customers).
