Has anyone noticed that “24/7 live chat” is increasingly one big lie? Just this week, I find that there’s nobody at @stitchfix or @SendPulseCom on live chat when they advertise 24/7

If your live chat has specific hours, don't take messages over live chat outside those hours then. Or maybe tell people on your site what the live chat hours are.
