Yeah. If we collectively accept that one item can look like another item via "magic", then accepting that the visual part is of a different material than the item itself shouldn't be much of an additional stretch.
A silly idea but ...what if we could mog different armor types? 
like plate wearers can have leather parts if they don't like the full body metal gear
or shamans and hunters have more cool mixes in their sets ...cause they deserve better.
