Because obviously you're going to have a phone, and Apple is a phone company that makes laptops.
I'll still also have a phone. This argument doesn't address my LTE-connected iPad's existence either.

I don't want to not have a pocket computer to take everywhere. I want to also be able to do laptop work without worrying where wifi is.

An iPad is a really big "phone". Maybe once macOS is finally deorbited you'll see iOS laptops/2-in-1s with LTE.
