I’m confused - that salary is not that big where is the unmet demand?

When you say "not that big" what are you comparing to?

Average new college graduate salary is something like $61k. An industry paying $10k over that does not seem out of normal bounds

Especially when you figure it’s a stem-ish field and requires time away from home and bad hours - $70k seems like they aren’t even trying

just because entry level pilots used to make peanuts does not mean there is a shortage now does it?
