I am answering my own question because I just realized what is happening... I have "Last updated:" in the content area below a table, and Google picks this up as the publish date. Is this intended?

Is there a known issue with Google index timers?
The article published today shows as "3 days ago" in SERPs.
Checked all tags including RSS and published_time and all show the correct date. Google Cache also shows the correct date.
