We forget. Alleria used to hunt orcs in Quel Thalas - for Fun. She hates them, she despises them for what they have done to her once former home. She was never getting dark. She always was, she was dedicated to her goal.

How and when? They came from 1.000 years of war. When they came home, the same orcs were at war again. When and how especially why should she change? She has absolutely no reason to do so

Generally, I'd say that 1000 years is a long time to hold on to that sort of grudge, especially having now gained some familiarity with the sort of evil that drove the orcs when they first came to Azeroth. But to someone with Alleria's longevity, maybe not. You've convinced me.
