    I have a tendency, although sometimes unintentional, to visit the house of Hades. Lesson learnt: cook your meat to well-done or overcook it if there’s a chance it might be contaminated.

    One more lesson learnt: slow-cooking increases histamine in the meat. If you are histamine intolerant, forget about slow-cooking or you'll end up having itchy rashes on your body.
