I played the original when it was new as well as again a couple of years ago with the PS3 remake. I always thought the controls, camera and frame rate made it a flawed game with a ton of potential. I hear your point on the color palette changing though with the 2018 remake.
-
Honestly I'd much rather see a Colossus 2 (or something similar) than yet another remake at this point. I loved the original game but the core concept of "big world, big boys, spooky, searchy, stabby times" has a lot of potential that no one seems to be exploring.

You've created a sense of loss in me despite me not having played the original or the new one. Beautiful. Thank you.

I agree with many of your broad points, but as someone who has played the two previous games I think that the remake does very well aesthetically, even better than its predecessors. To me, the main aesthetic theme in SoC is loneliness and solitude, not death or barenness.
-
I also want to point out that: customizable controls + 60fps/no blur is an accessibility thing, and personally I don't believe that accessibility violates the purity of art a photo mode isn't inherently kitschy, and the example shown actually conveyed the game's tone very well
