I’ve never had a security operations role that was purely looking at network traffic (especially in zero-trust orgs it’s way less relevant), nor one that was entirely focused on just monitoring

About security: where you have to build security 'walls' at best? in the center or just in the (most far) docking base

For Zero Trust you put walls around everything, and only grant access when needed.

Depends on the org and how big it is, but there is also business continuity planning, disaster recovery, identity and access management, vendor management, technical compliance, program management, internal/external communications, inbound due diligence, cryptography management.
