The more I deal with edge cases in SQLite, the more I realize it's not actually a very good database.

I lack knowlegde of the intricacies, wouldn‘t you pin the wide adoption of sqlite to it being good? Circumstance? Ease of use?

PHP and MySQL both have wide adoption. I would not call either of those good. Its wide adoption is likely due to it being the *only* reasonable embedded SQL database. It's well tested, gets the job done, but that doesn't make it "good"
