incompatible character encodings: ASCII-8BIT and UTF-8
One system, not another.

Yup, the issue occurs when I add a non-ascii character (e.g. β), and I can remove it and the issue disappears.
How are you adding it? What is the encoding of that character when you add it? The actual bytes can vary.

Erm, copied from a ticket, input via a kendo UI component. If I look at it in the console, the character is there.
