incompatible character encodings: ASCII-8BIT and UTF-8
One system, not another.
Is the data actually the same on both places you tried it? That error means your string isn't valid UTF-8

Yup, the issue occurs when I add a non-ascii character (e.g. β), and I can remove it and the issue disappears.

How are you adding it? What is the encoding of that character when you add it? The actual bytes can vary.
