What do people use for email hosting these days? I'm changing to a new domain and haven't done this since google apps was free

Fastmail is great, but it being an Australian company with servers in the US (both having some of the worst privacy laws in the world) I decided not to use them. Currently I am on Mailfence which is closer to my ideal provider in terms of privacy.

I honestly don't know but most website will not accept non-ASCII addresses anyway so that is not something important for me. They do support the + addressing though, which I use a lot.
