What do people use for email hosting these days? I'm changing to a new domain and haven't done this since google apps was free

Also +1 to fastmail, but at least a quick check, it wouldn't let me add "gruß@$domain.com" as an inbox alias, so I'd guess it doesn't support non-ascii characters.

Punycode will only be for the domain. Mailboxes just use UTF-8 (but every server involved has to support that)
