does the rust community have any opinions on having multiple assertions per #[test]

My opinions are roughly the same as in Ruby (differs based on unit vs integration, ultimately the answer is "whatever makes your tests more clear")

Absolutely. Generally depends on setup cost too; single in unit, multiple in (slower) integration tests.
