i also keep running into recipes that want like 1oz of condensed milk, which comes only in 12oz cans and says it should be tossed after a few days

oh this is evaporated, i gotta sweeten it myself why is that anyway, i would think sugar makes stuff MORE susceptible to bacteria growing. but like honey lasts forever

Honey doesn't have enough water in it for bacteria to survive. Other than botulism, which it has plenty of. (Looked this up when my daughter's doctor said not to give babies honey and got curious)
