I’m not quite sure as I am not the developer writing this, but as far as I know it should work fine. Just SEP won’t work, so no passcode and other authentication methods.

Sweet, could this be used in a dualboot? That way if I’m in the secondary OS and my phone dies it could reboot into the main OS unjailbroken.

For iOS 11+, yes. In iOS 10.3-10.3.3, the APFS is too outdated to be compatible with recent APFS. iOS 10.2.1 and below are HFS so they obviously won’t work.
