Is there a way to globally catch errors from unhandled node callbacks? ie. you call child_process.exec() without a cb and it throws an error

That's when a JS exception is thrown. Node callbacks just pass the error to the callback if it was specified.

The lack of a callback is intentional, I just want some way to catch all the errors rather than manually wiring up my own propagation logic.

If you promisify the call (8.x has a handy built-in), then you can use the global events for monitoring unhandled promise rejections
