I wonder if the people making paid courses donate any of the proceeds to the projects they're teaching.

Nah I'm not saying that. I mean that those profiting off the work of open source projects should donate a portion of the proceeds

Politely disagree. A good and popular course, even paid, can fuel a FOSS projects ecosystem/provide benefits more valuable than donations.
