Them: You removed RSS from your site.
Me: Yeah, there were problems with the tool I used to generate it and I don't have the bandwidth to fix that.
Them: "I enjoy your content and will miss reading it."
Maybe it's just me, but are they trying to put me on a guilt trip?

Email is very noisy for a lot of people. A mix of spam, random subscriptions, work, personal etc. It's not a very high signal place where most people consume their content.

That makes sense. I guess I didn't give enough context from the email. The way this was written was in the same tone as someone threatening to use another OSS project if you don't fix a bug for them.

Also accessibility! Even if your website is accessible, many folks only use RSS for reading since it’s consistent + accessible. (I am also guilty, for the record. Supporting RSS has been on my list for awhile.)
