I started with vim so now that's what I prefer...but regardless of which you choose, you'll wonder why you didn't start using emacs/vim sooner...

I'd recommend hide the tabbar and minimap as well

+1 on minimap. It’s the first thing I turn off. I don’t know why it’s useful, you can’t read code off of it anyway, and it reduces working space by so much.

I have been doing this for a while too. I find that hiding the UI pretty much forces you to learn the keyboard shortcuts
