I could have sworn it was Apple emoji a week ago. Do you use native emoji on certain platforms? I only recently switched from macOS.

What device are you on? I'm seeing Apple emoji on my MacBook. I wouldn't be surprised if they use system emoji. (They moved to system fonts a while back.)
