Seriously. Just an enforceable code of ethics (meaning, they’d back you up if you refused to do something unethical) would be priceless in this industry.

I feel this a lot. Recently, I've been rejected for several positions for other more 'senior' developers, and I can't help but wonder if that's code word for a 'CS degree' (I'm self taught, but have 5+ years of experience)

I mean, there's arguably no line of work where you strictly _need_ the degree to do the work. You can be great at the practise of being a brain surgeon or structural engineer or judge without a degree.
