Sorry to keep the egg thread going but: it's the drying out that makes the egg hard in the fridge. Coat the egg in e.g. oil or butter, or keep it in a tupperware full of cold water and you'll keep the moisture in (change the water regularly if keeping more than a day)

Shells are super porous, and boiling takes off the protective outer layer, so they can still lose a lot of water! But tbh if you're just keeping it in the fridge for a morning I don't think it's likely to go hard
