seriously! they are so fucking good and i know that they're slightly tricky to do, but i a) have no clue in what way they are tricky and b) have no clue where to start

have you checked online? Although, will probably be shit. They are great, not enough lemon used in Western cooking IMO

UGH the thing is that i've been burned so many times by greek recipes online, where people are like "ACTUALLY you can use mint instead of dill" so i'm scared of labouring over potatoes that turn out to just be roasties with a dash of lemon juice
