Messy hands, but I rub the wedges in lots of olive oil, fresh squeezed lemon juice, garlic cloves and lots of proper sea salt so all the surfaces are really oily and lemony before putting under the grill and turning every now and then so they don’t get dry but have a slight crisp

My boyfriend is Greek and I sort of learnt how to do them. I toss the peeled, quartered potatoes in a bowl with olive oil, lemon juice, lots of chopped garlic and salt and freshly ground pepper and then I put them in the oven at 180 degrees C.
