Unless gameplay is constantly evolving with new mechanics or is the core of the experience I lose interest after a handful of hours, after that I need to be invested in the story to keep me going until the end. Better stories = more time invested

This exactly. Just because some players ignore anything resembling narrative doesn't mean all of them do - and for many, without a depth of world and story to engross them, there is simply no point in playing.

I think this is why I dislike open world games so much. "What if you could do everything" doesn't motivate me to do anything. I need a reason to progress beyond "here's some new shiny thing" or checking stuff off a list. If I want to see what happens , though, I will play.
