Me, a games writer: I wish I had something like Word where I could write freely, except that it recognised components of branching narrative and would format it for me, tell me where my logic is broken and spit out a tree-style diagram (or Unity plug-in?) at the end.

I find the Ink syntax really obscures some of its more complex features, making it significantly harder to visually/cognitively parse (even with syntax highlighting) than markdown. It’s probably the best option currently, but it’s not without its challenges.

I ran across Wunderverse (macOS/iOS only) a while back, and while it's not terribly useful for going directly into a game engine - it does provide a much more user friendly way of prototyping including support for conditionals, objects and events.https://durablebrand.software/wunderverse

There's also Inform http://inform7.com/ which is geared more towards traditional IF parser-based projects. It's English-like syntax takes a bit to get your head around, but it might also be useful for prototyping ideas beyond Ink and Twine.
