Maybe I'll have some luck here: Twitter, what natural ingredients could one use to dye their hair brown that would wash out extremely easily? A method that would sound legit for someone a few hundred years ago with very little money.

Bark, natural oils, animal fat and some plants are a first step. Sometimes Musilage could also be used to help the mixture stay in the head. Some berries, Henna and the shell of some nuts was also used. :)

Later on they were making some powders created by mixing dried plants and flowers, roots, and barks of certain trees, mainly Logwood, and then mixed with some kind of sticky substance like Mucilage, or other natural pastes to dye the hair.

Potassium Alum was used during the Baroque mixed with boiled plants, and leaving some plants (Rhuibarb, Musk, Gall nuts) for days in pots and then mix all of that with some water to create a poultice.
