Because peoe who aren't racist never end up in the position of having to publicly affirm their non-racism?

And as a consequence they aren't constantly worried about the accusation. Ever try telling a racist "I haven't been called a racist in years"? They can't believe it. They think it's a universal experience among white people and being on guard is normal.

Also, if you aren't racist and get called on something the usual response would be to say "you're right, I'm sorry and I'll amend my behaviour" not to deny that you're racist.
