My friend who doesn’t like eggs enjoys them this way: Spread as thin as possible on a pan and cooked til brown on both sides. They will lose all there spongy eggy texture when cooked like this and almost be like some kind of pork chip. Especially good when heavily seasoned

- big batch of veggie chili - big batch of chana masala - slabs of good firm tofu (I use
@hodofoods) marinated in pickle juice, dredged in starch slurry, then seasoned flour, then both again, then pan-fried - wheat gluten sausages, can be boiled or baked -
general advice: - visit your local farmers market and make friends! there’s not much produce right now but in a few months you can get way better stuff than supermarket crap - find chefs you like and trust and follow them/their restaurants on insta

I am sorry. They can be cooked/baked into something but even frittatas or quiches get at me wrong.
