There is a study from Italy that seems to suggest low levels of vitamin D could be a significant risk factor (perhaps you could frame it as vitamin D having protective effect). What about that? Are there any known connections between levels of vitamin D and immune function?

sure, somebody thinks it's good, and they did give Vitamin C to some COVID-19 patients who got better, but that article doesn't compare it to a control.
