For xMas dinner this year, a hybrid btwn @kenjilopezalt's & @meathead's rib roast methods.
I cut the bones off, salted & dry cured in the fridge for a couple days, then rubbed w/Meathead's Mrs. O'Leary's Cow Crust before slow roasting & reverse searing.
