I use my stainless steel for boiling pasta or rice. Everything else cooked on the stovetop is made in my cast iron - including omelets and all that.
I saw a guide to French omelettes (very delicate) from someone I otherwise trust who said to skip the CI for them, but I have no trouble on mine. Seasoning & temp control are everything.
