as they say, Tribe has forgotten more con law than I'll ever know, but I read that as specifying an existing officer to act until election

How would election make one an "Officer", eligible to assume Presidency? Holding position of "President-Elect" doesn't make one an Officer.

In theory, could always create by statute an office of vice-vice-pres w/ no duties except to step in to Oval if other two go down
