Yeah agreed, I like the treatment they gave to the remastered original series and TNG. Would like to see at least an HD version of DS9 and Voyager, not too much FX work needed on those.

Unfortunately they're never gonna do HD DS9/Voyager, because unlike the original series, they were transferred down to standard-def videotape before any editing took place. When they did HD TNG, they had to go back to the original negatives and pretty much redo ALL editing/cuts

That's a shame. TOS remastered looks ridiculously good given its age. There are so many details it can be distracting. You can see the occasionally iffy/distracting makeup, spot Kirk's stunt double during some action sequences, etc.

I found it really fascinating for that reason too. On top of being much more "chill" to watch than recent series, the quality (and directing style, I guess) exposed a sort of minimalist aspect which I thought was reminiscent of theater.

I watched all series in order a ~year ago (except Enterprise) & I thought it was also really neat how consistent the directing style is over so many years. The one thing that grew bothersome was that after TOS, the bg music was 98% forgettable, the very definition of serviceable.
