In my experience, you've found product-market fit when a customer chooses to use it despite it not having feature X. If all you hear is, "I need one more thing to adopt your product", it's probably hopeless.

We stopped asking non-customers for feedback, and *before* presenting our solution, started "leading the witness" towards the problem we solved. Finally, we asked if they would buy the solution to that problem.
