As ancients would routinely sign the name of the thinker who inspired them instead of their own, who would have a canon, in this sense?

This is especially true of the Pythagoreans. Plato was canonized soon after his death though.

That said, some did write under Plato's name. Thus the 'spurious dialogues'.
