It's more likely happened that way : Khashoggi left his iphone to his fiancee. When he entered consulate , he connected his watch to the consulates wifi. Apple watch synchronized with the phone over the internet. He recorded the interrogation with 3rd party voice recorder app.

prob is part which read that attackers managed to delete some of his cloud files by using his fingerprint on his watch.
