I used to run into my ex-teacher and eventual friend Edward Said buying hummus on Broadway at the Samad Deli (Lebanese); it was in fact the best hummus anywhere. HE wrote a book rather like the one you're proposing.

The question is does it have chickpeas, which is what hummus is. If it's beat and tahini, it would be simply a kind of beat dip which is delicious, but it ain't hummus.
