"Good Omens" by Gaiman and Pratchett seems too obvious an answer, but even my mom liked it, and she doesn't usually read "speculative fiction". Pratchett's "Small Gods" is another gem.

"Illusions" by Richard Bach had an impact on me as a kid, but I'm afraid to read it again because I'm not sure it would hold up...

The Magic Mountain. Recently realizing (the second time through) that loving this novel so much was a bit like joining a cult. No regrets.
