It depends a lot on what you enjoy doing -- hiking, just watching the landscape, going on some kind of safari-like thing, spa, etc.

For Alaska: cruising up the Alaska Panhandle from Seattle to Anchorage is supposedly quite relaxing, there's the train from Achorage to Seward (day trip, you have 7 hours in Seward to go on a local sightseeing cruise), there's also a train from Anchorage to Fairbanks. 1/2

Canada: Banff and Jasper are two obvious "relax" destinations in summer, and has hiking opportunities too. The area between the Rockies and the Cascades (Kamloops, Kelowna, etc) has some beautiful landscape, and supposedly good beer and wine, if you like that kind of thing. 2/3
