I'd go further: why doesn't it save the undo/redo stacks along with the document? What if I made a mistake, saved, quit, then realised? Why shouldn't I be able to open it back up and undo?

The key thing there would be to have a clearly understood "export" option for when you wanted to send to someone else and minimise a) file size, and b) their access to your past versions. Very doable, though.
