When Hannibal Lecter famously said “I ate his liver with some fava beans and a nice Chianti” he was saying more than you might think: the antidepressant MAOI prohibits the consumption of liver, fava beans and red wine. He was slyly revealing that he was not taking his medication.

I think that was implied after he revealed that he killed and ate a person for daring to psychoanalyse him...

He might have been taking his medication and just flouting the rules about what he could eat and drink. What a rebel!

Not many people know this, but I heard Hannibal Lecter is also an amazing organist.

Exactly right. The director changed it from amarone to chianti solely for the reason most people knew of chianti - amarone was still a relatively unknown style. Chianti is a total crash with liver-dishes, far too thin bodied for such a fatty protein. (Liver in general)
