People wouldn't mind vegan food as much tbh if it wasn't constantly combined with these awful, small fart-sniffing molecular deconstructions with purees. Most people eat to fill their bellies, which is where the disconnect lies. Many vegan constructions aren't too substantial.
There is a line between poverty food and haute cuisine that vegans find challenging to occupy, and it's a bit sad tbh.
