This morning, I set up OpenVPN on a cloud server and connected my laptop and desktop computers to it. Then I added the Remote Explorer extension to VS Code on my laptop, and it now just works as if it's running on my desktop machine, with Scala, Metals and Fury, all over SSH.

Agree, is that a free option? That’s why I did it with the Pi, after initial small purchase it’s basically free Linux host. I like your idea, I might give a try. Is there a OSX vpn client that works quite transparently to join the vpn, or use OSX built-in support?

Also tasked older macs with ssh/socks proxy which works well, but probably a full vpn is the best way to go. I use my socks proxy to route everything via home internet encrypted when working from coffee shops etc. Works well overall, have done this for years one way or another.
