Anyone got any hints and tips for setting up company and getting estonian e-citizenship?

It's reasonably straightforward. I requested my e-residency online with the Estonian government, visited their Embassy in London to collect my ID, then started a company using LeapIN (now called Xolo) who manage the company setup/accounts online. I should visit Estonia one day.

they seem to be just for 1 person company, happen to know anywhere that does slightly more complex ones?

There are a few licenced agents who can do it, and I remember seeing a list of then somewhere (I don't remember where, but it wasn't hard to find from the Estonian government pages) but I have no experience of them. For anything complex you probably have to visit Tallinn.
