Rather than learning words, which is really just a means to an end, why not set goals for the end. Spend X hours having conversations in the language. The hardest thing I found about learning German was forcing myself to speak it in situations where I could revert to English.
As for conversion, I'm much too far away in all these languages for it to ever be convenient for the other person if they know even a little English. Though I do take the opportunities when I can, but usually just to indicate that I'm willing to try, before we switch to English.
Being British, I'm forever trying to balance my embarrassment about forcing someone else to speak English with my embarrassment about not being able to speak their language well. It's a wonder the whole country isn't completely dysfunctional, oh wait...
