How can you know in advance, before working with them? The key problem with a PhD is that by the time you really know who your advisor is, it is too late to change.

I think this works in most cases. But in the cases that do matter a lot (i.e. sociopaths) asking former students may give you false information.

If you have been advised by a real sociopath, you have to somehow justify spending 4-6 years of your life with them. In those cases, former students of those guys may even praise them.
